CMT expands cheese technology following GEA acquisition

GEA took the opportunity to showcase machinery from its newly acquired company CMT, at Cibus Tec 2016.

The Italian firm, based in Peveragno, supplies equipment and integrated production lines for pasta filata cheese (fresh mozzarella and pizza cheese).

Its portfolio includes cheese making vats, curd drainage, maturation systems and molding machines. 

CMT has been working in the dairy industry since 1970. It generated revenues of approximately €11m ($12m) with around 70 employees in 2014. 

While the European Union has been its main regional market, CMT also has significant projects in the Americas. 

Following the acquisition last year​, GEA has integrated the business into its Application Center Dairy within the newly created Business Area Solutions. 

Steam and hot water process

Lorenzo Ioren Napoli, international area sales manager, GEA CMT, told DairyReporter its latest machine uses a steam and hot water process within the same technology. 

The machine can work continuously without stoppage. Produces fresh mozzarella with a humidity up to 60% and pizza cheese with up to 48% humidity​,” he said. 

According to Paolo Tomatis, sales director, CMT, since the acquisition in June, 2015, the company has benefited from the experience and know-how available within the group and has been able to invest in new technology, expand its research and development program, and employ new talent. 

Our constant increase in sales since last June demonstrates the difference GEA has made for us in such a short time​,” he said. 

Having access to the entire scope of supply from GEA has enabled CMT to expand its service offering to include equipment for the whole production process of ‘pasta-filata’ cheese, right from milk reception through to the packed mozzarella ready to be sold on the market.
