Spanish company Premium Ingredients has introduced stabilizers for sliced cheese for IWS (Individually Wrapped Slices) and SOS (Slices on Slices) that is says will reduce costs.

The ingredients developed for IWS are mainly based on modified starch and hydrocolloids. They allow cost reduction, thanks to dry matter and protein content reduction (yielding products with 13, 11, 7 and 4% protein content).

The company says that the stabilizers do not alter fundamental properties such as processing, optimal separation of the plastic foil, flexibility and remelting.

The range of products for SOS is composed of ingredients mainly based on starches and hydrocolloids. These stabilizers result in products with 18, 9 and 5% protein content.

As for the final product, Premium Ingredients says they have better elasticity, firmness and separation of slices.

The company markets the products for sliced cheese in its "Our Formulas" category; a range of ingredients for processed cheese, beverages, dairy products and other processed foods.

Premium Ingredients, a Blendhub Corp. brand, specializes in the formulation and blending of food powder products.
